Paul Mansell 29th April 2023

Liz was my mother-in-law, and I have known her since she welcomed me into the family in 2008. I have many fond memories of spending time with her and the family, but I will try to summarise some of my favourite ones below: - Liz was a very good planner of trips and journeys, and we both shared a love of maps. Not many people share my love of maps! - I will always remember our family holidays to Tuscany to celebrate Pete and Liz's wedding anniversaries. We have been fortunate enough to go three times as a family, and each time, Liz organised a fantastic place for us to stay, destinations to visit and restaurants to eat at. In particular, we have very fond memories of their 50th anniversary trip in May 2022 because of the food, the villa and the places we visited. - We have always spent either Christmas or New Year at Pete and Liz's and one of the main reasons that the occasions were so special was down to Liz's cooking and catering. She always made outstanding roast dinners and I have never had gravy as good as what she made! Puddings were always plentiful and creative. We had great times playing games like Scattergories and listening to music in their dining room. It is hard to imagine this first festive period without her. - On the subject of food, Liz will always be remembered for her BBQs. Pete demonstrates a meat masterclass, but Liz was an expert at rustling up creative and interesting sides - a great partnership. These took the BBQs to another level! - I will always be grateful to Liz for her help with Chloe and Emily. Not just when we were together or when they were really small babies, but Pete and Liz have had the girls on numerous occasions so that Nic and I could have a few days off. I know Nic will always have cherished memories of Liz being present for the birth of both of our babies. - Since my first visit to Lincolnshire, Liz has made me feel welcome in the family home. I will always be grateful for being treated so well and have never been short of food or drinks! Pre-dinner gin and tonics will never be the same again. The funeral service was a wonderful occasion and a fitting tribute to much-loved Liz. We will never forget you and we will always ensure that your granddaughters' memories of you will remain with them for the rest of their lives. Lots of love, Paul xxxxx
